Halloween Pancake Special~

Matt and I made Layered Pancakes with syrup and Boysenberry ice-cream This morning. For newbies at making pancakes we actually did a pretty good job (and they were extra fluffy!) We actually stayed in the whole morning eating pancakes and watching How I Met your Mother... but anyway, here's the recipe so go try it out!

You will need:

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg 
3 tablespoons melted butter
1/2 teaspoon Vanilla essence/extract

Like any recipe, mix the wet ingredients and dry ingredients separately then gradually add the dry ingredients to the wet ingredients bowl and mix until you reach perfect consistency. Sift together the flour (preferably twice), baking powder, salt and sugar in a large bowl. Make a well in the center and pour in the milk, egg, vanilla and melted butter mixture and mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle or pan, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
